By having a love affair with the “Royal Courtesan”, a most succulent and delectable raw oyster experience. Direct from my oyster beds on Cortes Island, the Oyster Man likes to offer a “grower direct” oyster eating experience that will be memorable. Love affairs usually are!
The Royal Courtesan is a beach grown oyster with a fresh and crisp taste that imparts a feeling of both opulence and adventure. It has a distinct dark mantle and a very hard, well developed outer shell. simply sensuous! Each oyster is raised with consummate care on my tide-swept beach, and when it’s ideal size and quality has been reached, it is hand picked and delivered directly to homes, restaurants, or social events. The Courtesan truly represents what is for me, a labour of love.
